First thing in the morning, not all of us are at our best, and it can be a challenge to make breakfast. But! In just 69 nice little steps, you too can fill your freezer with a month’s worth of breakfast burritos that can be ready in 3 minutes as you make coffee.

I also use an egg whisk, wooden spoon, steel fish flipper, mixing bowl, colander, potato masher, chef’s knife, measuring cup, 3L beer pitcher, saucepan, cutting board, serving spoon, various plates and cups.

You’ll also need a supply of plastic wrap, butter, cream (I use 10%), and some olive oil. Not including those 4 ingredients, and after taxes, I’ll make 42 burritos at a unit cost of $2.52 each ($106 total)

Put the beans in a saucepan, cover, low (10%) heat. Stir occasionally, don’t let any burn to the bottom of your saucepan.

Break apart the sliced mushrooms into smaller pieces, keep them aside in a bowl. Put some olive oil in the wok, put in your peppers and onions, medium heat (60%), stir it with a wooden spoon, don’t forget to stir the beans.

Microwave the spinach and then use the potato masher to squeeze out all the water. Once it’s just a moist pile, set it aside.

Start cracking open the eggs in to a glass, three at a time. Pull out any shell fragments, transfer to the beer pitcher. Whisk and break the yolks. Your beer pitcher should hold all 36. Measure out 360ml of cream (10ml per egg) for the scrambling.

By now, the onions and peppers should be mostly cooked, so add in the mushrooms and keep stirring the wok, and also the beans. Stop covering the beans at this point, we want the water to start evaporating now.

Strain out the cooked vegetables in the colander and mixing bowl, top with the ham. Wipe down the wok with paper towel, turn the heat down to medium-low (25%), melt butter (I use 75g, one eighth of a half-pound brick) in the wok before pouring in the egg and cream.

Using the steel fish flipper, keep scraping the eggs off the bottom of the wok as they cook, get them up to a nice scrambled consistency before mixing in the beans and spinach. Turn off the heat. Mix that up to an even consistency before adding the vegetables and ham.

I’m sure you could make them a little healthier with different bean choices, maybe more vegetables, things like that – and you could make them cheaper by skipping the cheese or replacing the ham with something weird. Report back after your own trials and experimentation!
